ELABORATION
12 months of ageing “sur lie” with “batonnage” * in French oak barrels (Vosges).
*Ageing on natural fine lees, which is raisaed at regular intervals during a period of time between 2 – 6 months.
COLOUR
Purple red.
NOSE
Marked balsamic aromas of eucalyptus, pennyroyal, incense, iodine and sage, accompanied by Chinese ink.
MOUTH
Harmonious chocolate and currant flavor, a very high-Atlantic, fresh wine and one with fantastic acidity.
CLIMATOLOGY
It was a spring with a lot of small rainfalls and with snow the 21. of Jan. and 8 of Feb. Budding was between late March and early April, with a very rapid growth. The beginning of May was very hot. The whole leaf wall was formed in three weeks, so flowering was early from 15 to 23 May. The 20 of May the weather refreshed. In July there was a strong and continued heatwave of 6 weeks. Vintage was also very early from the 12.08. to 18.09.15.
Although it was very hot in July, the quality and quantity of the harvest was very good and with high acidity, because since the beginning of September it rained 15 lt. and the nights starts refreshing.
