ELABORATION

8 months of ageing “sur lie” with “batonnage”* in American and French oak barrels.
*Ageing on natural fine lees, which is raisaed at regular intervals during a period of time between 2 – 6 months.

COLOUR

Cherry red.

NOSE

Mediterranean forest of thyme, rosemary and lavender. Cinnamon and clove. Very balsamic.

MOUTH

Intense ripe red fruit with a mineral and lively acidity. Notes of anise and cinnamon. A subtle, harmonious and at the same time powerful wine.

CLIMATOLOGY

On day 19.01.17, it fell 30 cm of snow with a temperature of -5ºC at night. For more than 60 years it has not snowed so much. The outbreak was in early April. The flowering began on May 12, and ended at the end of May. According to that date of the flowering, the harvest should have begun on the end of August / first of September. But being an extremely dry and hot year, it was not like that. The harvest was advanced and we started on August 7 and ended on August 26. Therefore it was one of the driest and hottest years, since the temperature in summer rose several weeks to 40 and more degrees, although at night it was always refreshed. Fortunately our vineyard are already well rooted and thanks to the practices and the ecological, biodynamic management, they had the capacity to solve these climatological inconveniences and gave us a complete harvest, healthy and at the end surprisingly very balanced, with a fantastic natural acidity, combined with very good maturity of the grapes/berries/seeds. There was no overrun or lack of phenolic maturity. This year after the first rains of 43 ltr on October 18 and 19, we plowed the streets for the first time 12 years ago to replant our alfalfa plant cover. It is very nice to be able to see / observe how each year more order is installed in our soil and each time with more harmony.
