ELABORATION

8 months of ageing “sur lie” with “batonnage” * in Slovenian oak barrels.
*Ageing on natural fine lees, which is raisaed at regular intervals during a period of time between 2 – 6 months.

COLOUR

Dark red cherry.

NOSE

Intense aromas of red fruits and aromatic plants of scrubland: laurel and thyme.

MOUTH

A noble and elegant wine with lively acidity and a persistent finish of red fruits and coffee.

CLIMATOLOGY

Cold January with temperatures down to -7ºC and with many frosts, rain and snow on the 12th. The Outbreak was on March 20 accompanied by late frosts that thank goodness did not get lower than -1ºC, we only had some damage/frost in the Pinot Noir. Spring was quite moderate in high temperatures, so flowering was later and longer from May 5-31. As in April and May there were still moderate temperatures with some rains, the growth was not as explosive as in other years, and a very strong foliar mass was formed with good development of the flowers/fruit set and clusters. The first breakpoint was made later than normal on 20.05.21. Leaf mass formation was completed in early June. In the middle and end of June there was a strong attack of fungi, especially Oidium, which thanks to the good distribution, opening of the foliar mass and the biodynamic treatments we were able to control very well. The veraison began on July 19, almost the same as in 2020. The harvest began on 14.08.21 with the Pinot Noir and we finished it on 20.09.21 with the Petit Verdot as usual. So curiously we start 5 days before, and finish 9 days after the harvest dates of 2020. There was a fantastic maturity of phenolics and sugars, acids, which gave us in almost all the varieties again very moderate wines in alcohol and with a phenomenal harmony of fruity aromas with the freshness of the Atlantean influence. The first very small rains of 2 and 6 l started in September and October respectively, so it was a very dry autumn and until the end of December no serious rain came. We hope that in 2022 we will have more rains again, since in general this year 2021 was very dry and with extreme temperatures both cold and hot.
