12 months of ageing “sur lie” with “batonnage”* in French oak barrels (Vosges). *Ageing on natural fine lees, which is raised at regular intervals during a period of time between 2 – 6 months.
Balsamic herbs, iodine and chinese ink.
Spicy and fresh, ginger and liquorice with backround of black chocolate.
This was not a too cold, long and extremely rainy winter. The temperature were not at any time less than -2ºC. No late frost. Flowering began the last week of april 23.04.10 and ended in one week 05.02.10. The growth was rapid and balanced, thanks to abundant winter rains. Interestingly in the vegetative phase (March-September) only it rained 180 ltr. compared with 1.206 ltr. fallen throughout the year. The grapes began to ripe the 24.07.10, but then it takes time to madure until the end of August. We started the vintage 29.08.10 and ended on late September. The quality was excellent, very balanced and with good values of total acidity.
