ELABORATION
12 months of ageing “sur lie” with “batonnage” * in Slovenian oak barrels.
*Ageing on natural fine lees, which is raisaed at regular intervals during a period of time between 2 – 6 months.
COLOUR
Dark red cherry.
NOSE
Intense aromas of red fruits and aromatic plants of scrubland: laurel and thyme.
MOUTH
A harmonious wine with intense red fruits, aromatic plants and coffee predominate. Powerful acidity and a persistent finish.
CLIMATOLOGY
It was a very dry spring, and in general it was one of the driest years. The outbreak was around mid-March, then came a late frost on 25.04.19, which thank goodness, have no bad affection on the vines.
The Flowering was from the 18 – 31.05.19 and was quite uneven. The harvest was equally early and began on 19.08.19 and ended on 13.09.19. The quality of the grapes was very good. In some varieties was there less quantity, due to drought in general. Even so, and thanks to organic, biodynamic cultivation, very moderate alcoholic wines emerged, maintaining their high natural acidity, very Atlantic-style.
