12 months of ageing “sur lie” with “batonnage”* in French oak barrels. (Troncais, Allier) and American oak. *Ageing on natural fine lees, which is raised at regular intervals during a period of time between 2 – 6 months.
Intensive Cherry Red.
Aroma of Mediterranean forests, santolina, rosemary, lavander and ripe fruit (wild strawberry, redcurrant, gooseberry.
Ripe red fruit, fine touches of cacao, toasted aromas. Elegant tannins, very mineral with a nice terroir, strong and large fine finish.
A very cold spring, with temperatures almost every morning -8ºC. The outbreak was late March. Late April, with snow in the surrounding Sierras. The Flowering took place in the last week of May. We began the Harvest in September and was completed in mid-October.
